I've got produce running out of my ears here.... need more ideas for eggplant and peppers. Something I can freeze and reheat later possibly

Wow - that produce looks great! Maybe stuffed peppers? Maybe baba ganoush (not sure of spelling) with the eggplant? I love that way more than humus. Could pickle the small peppers? Enjoy all that veg!

toss with pasta,grill it kabobs.stir fry it with veggies.stuffed it scoop out flesh then stuff with a flavorful filling,braise it tomatoes .make a French Ratatouille.

Yes, seconding ratatouille. Also, because i am lazy, i keep pkgs of fried and breaded eggplant cutlets in the freezer (a brand called dominex and also trader joes make them). Super handy to have as a sandwich or on their own with marinara and parm. Also good on pizza, but i digress. Heat up in toaster oven. Anyway, you could make a batch and freeze with your cool foodsaver thingy.

Also you could stuff those little peppers with soft tofu and make "poppers" to freeze and reheat later.

Vegan, eggplant, lasagna; I use tofu with nutritional yeast to take place of ricotta.

My sister in law makes eggplant parm. Not sure if it freezes well. Her kids eat it quickly so she never gets to see if it freezes lol.
