Diario de slkey, 24 jun. 10

It is EXHAUSTING trying to cook for Daniel and myself every day... He has a shorter lunch break and gets off work an hour later than I do, so I'm the one trying to prepare food for us. He doesn't ask me to do it, but he would go without eating if I didn't.

So I go to the grocery store EVERY SINGLE DAY (even though we keep saying we need to plan out our meals) and I try to find new things to cook to mix up what we're eating, but even that is tiring. A recipe book once told me a meal would take 45 minutes to make...it took over 3 hours and that's only because I made Daniel and our niece help me. The recipe didn't include prep time in its estimate. :(

I used to cook breakfast, lunch, and dinner. Then it got whittled down to lunch and dinner. Now, for the last two days we've been eating sandwiches for lunch, and I microwaved frozen fish for dinner. I feel like a failure in that respect. I HAVE been keeping up with my exercise, and I'm really proud of that, but I don't really know what to do about this other feeling. Pre-making meals isn't really an option because we share two refrigerators between 16 people.

Our healthy lifestyle is going down the drain.

Two refrigerators between sixteen people is pretty rough. I could *swear* to you that having that freezer space will help you- not only for pre-making meals, but also for keeping frozen veggies and fruits and meat when it goes on sale. If it's at all feasible, see if you can get a chest freezer, or even a tiny little supplemental freezer. It would help *so* much. Keep on keepin' on, I believe in you. :)

Plan a few meals as your staples during the week (somethings you both enjoy that are easy to make). You can make spaghetti with sauce and a salad, just watch your portions and there are some healthier pasta's out there now. Have baked chicken, a sweet potato, and some veggies. Stir fries are very quick and easy. You can combine both fresh and some ready made foods sometimes. Write down meals you both enjoy and then make a plan. It can be done.

Thanks for the encouragement guys! I spent Sunday afternoon planning our meals for the week (though we still haven't done the shopping for it), and I made some shrimp and tomato sauce pasta for us to eat for lunch. Unfortunately, he just took the whole bag (which had both of our portions in it), but I have time during my lunch break to make something else, and now he can eat dinner before coming home so we can work out right when he gets here. Yay!
