Diario de caged liberty, 10 may. 08

"Can I have lunch with you?" I asked my toddler. "Sure, but you have to eat your salad"! Honest insight of a two year old! Is that all I eat??

I am not an adventurous person when it comes to food and I havent attempted any of the wonderful dishes that people have posted on their journals..though I always mean to! I am a born again carnivore, and chicken is my main staple. I don't eat pork, turkey, sausage (cant even eat the soy ones..its a psychological thing!)or any deli processed meats. I do eat beef occasionally and one day I was making beef bacon for my son and I really wanted to try it out but I just couldn't bring myself to do it.

I have finally introduced fish into my diet thanks to the Atkins. I had Tilapia which was surprisingly pleasant. No stinky odor normally associated with fish. (CAN ANYONE GIVE ME A COUPLE OF GOOD FISH RECIPES LIKE FISH PIE?)

Sararay had inspired me to actually obtain a book on Atkins instead of just reading up on the internet. And then a funny thing happened..as I perused Amazon.com looking for a book, I saw that the cover of the book was something I recalled having seen around my home. A friend of mine had lent me a couple of books, one being the Atkins revolution way back in 2003. I moved from California and went abroad. When I recently returned, I brought back those books because I always meant to return them, even after 5 years!!

I found that book which had been gathering dust for the past 5 years and finally read it last night. The good thing is I have been following the rules correctly. The better news is that now I feel empowered that if I have a question, I have access to the answer in my hand.

I promise Carol, that I will return your book..and also the books that I borrowed from Santa Monica Library which I also still have!!

Weight loss is nothing major. I gained 2 pounds in the past couple of days but today I managed to knock off a pound. Not too excited and a bit annoyed that I am nearing the end of my induction without the weight loss I was hoping. I am going to restart my induction with only one addition, strawberries. I have to get them in because according to the ladder, berries are the 4th thing you introduce back and by then, strawberry season might be over!!

We Brits have to have our strawberries and heavy cream YUM YUM YUM..its the second most popular dish after curry over there! (Fish and chips, oh I how I love you, but you have been taken over by curry as the number one dish of England!)

LOVE the comment by your toddler....out of the mouths of Babes... Glad you found that book. It's great to have as a reference even after you have finished reading it. Strawberries and heavy cream..sounds delicious. Do you just whip the cream and then dip the strawberries in it? When I was in London a few years ago, I just HAD to try the fish and chips. It was indeed very good. I even took a picture of the plate of food to prove to the folks back home that I had the famous fish and chips in London..lol Have a great day! :)

Well strawberries and cream are a summer staple in England. When you see them, you know summer is in full swing. Basically, you just chop the leaves off the tops and pour the heavy cream on. Variations include slightly whipping to get a thicker texture or fully whipped (sometimes some whipping powder is added to get that Reddi whip texture). All varations involve completely smothering the strawberries! (Now you will understand my love of heavy cream..we have so many delicious heavy cream based sweet dishes!)

My toddler isn't yet articulate enough to come out with a comment like that, although he always looks singually unimpressed if presented with a bit of lettuce. Cucumber he'll tolerate, cherry tomatoes less so. I'm sure he'll get worse before he gets better! Ooh - I've ordered English strawberries as part of my grocery delivery next week. Can't wait - there's nothing beats the sweetness of real English strawberries. The Spanish ones we get off season don't compare! Fortunately, I'm happy to leave the cream and eat them naked - preferably at room temperature when they're at their sweetest. Yummy - can't wait to get my hands on them on Monday!!

What a mother's day present - a babe who KNOWS her mommy!! Very precious. I'll send you a message on a couple of my fav fish recipes. I love fish and I make it quite often. I like it made almost any way! Good reading! The knowledge does really empower you!

Interesting about the curry and the strawberries and cream (you are making me awfully hungry). Funny how the curry in England tastes to much richer than in America (even in large urban centers). Your nick is very thought provoking, I feel free within my cage mostly, but it's sitll a cage. ;-) Great chart Liberty!

Mmmmm... strawberries and cream, yummy! Our strawberries are coming on here. LOVE the fresh ones out of the fields! Chart's looking GREAT!!
