We drank our kombucha that we made. Out scoby baby is still going strong.

Keyten, if you want cinnamon, how about making a tea with cinnamon sticks? Use the soft bark sticks, not the hard bark. I make a canela tea using cinnamon and black tea with sugar. My mother-in-law always made it and that's who told me how to make it. I am going to use piloncillo next time I make it to make kombucha. Piloncillo is basically brown sugar, but like Moo said, less processed and not as sweet, in my opinion.
