I tried to read up a bit on water weight but if anyone can explain to me in layman terms, how is it different from "normal" ..thanks

Cooked Beetroot, Butternut Winter Squash (without Salt, Cooked, Baked) , Cooked Green Cabbage (Fat Added in Cooking), Roasted Grilled or Baked Chicken Breast (Skin Not Eaten).

When you eat a lot of carbs. You tend to hold on to a lot more water than when you eat a low carb diet. So when you start cutting down on the carbs you tend to drop water weight first. Not actual fat. The first 3-5 kgs is usually water weight. Depends on how long you were eating a lot of carbs. So if you gain weight over night. It’s usually water weight. Hope I’ve made sense in my explanation.
