Victory of the morning. Woke up depressed (seems to be a theme lately) and just wanted a granola bar. Forced myself to fix a healthy breakfast instead. This was a much better start to the day. Mushroom popover (basically sauteed veggies cooked under a batter), tomatoes, and avocado. And, of course, lots of coffee.

I love to cook. One of the symptoms when I'm struggling is that cooking feels overwhelming. Fighting that this weekend. Today I'll make a big pot of bean soup, maybe with some of the seitan I made yesterday for flavor.

Someone told me that depression is like you're sitting in a room, and you know there's a bowl of happiness on the table across the room, but you just can't muster the energy to get up, walk a few feet and retrieve it. My bowl of happiness seems to be in the kitchen.

JCordry, thank you 😊 liz-andra, it wasn't bad! One of my favorite dishes, in fact, although I don't make it often because my husband isn't a fan.

Trick I learned on peanut butter mix 2 Tbsp of peanut butter with 4 Tbsp of pumpkin puree. You don’t taste the pumpkin and it spreads easier and goes farther. Here is a wish that today also rolls easier 🥜

it seems to be that time of year, a lot of people reporting that they are depressed and feeling out of sorts. Hang in there, betters days are coming. You make Seitan? I want to try it, I hear it is great. Hope your day is a good one. :)

interesting trick with the peanut butter & pumpkin. I had to stop buying peanut butter altogether.. it's my kryptonite !
