ClariceAnna -- I'm not known for having actual recipes. 😉 A quart of broth, enough cut up baked potato until it looks right, some dried minced onion and garlic powder, and a can of cannelini beans, including the liquid. Mash it up a bit with a potato masher to desired consistency. Add half a pound of frozen kale or spinach.
I honestly don't recall how many potatoes I used

Ohoooo, thanks for sharing your "recipe" for this. Lol I cook the same way sometimes... I can tell you most/all of my ingredients, but I don't measure them out or anything. I cook to taste and even sometimes smell. Hahaha. This sounds awesome and filling! I keep trying to look for new ways to incorporate some more vegetarian / veggie based meals into my diet. THANKS for sharing! :)

Hope you like it, KathrynNew! We're not vegetarians, but both of us prefer vegetarian foods most of the time. There are so many good meatless meals!

CrystalJo24 - we are waaaay into using up leftovers in this house. I grew up in a working class family with 9 kids, so food waste makes me cringe to this day 😉
