Some people freeze tofu, probably after draining, to give it a meatier texture, then they crumble it. I recommend marinating it for a day or so to give it some flavor.

We freeze it zapotz, but we do that in the package rather than opening and draining it. It does definitely change the texture

I like my recipe for sweet and sour tofu made with green pepper pieces, pineapple chunks, tamari, oil, garlic, cider vinegar, honey and cornstarch to thicken. It is tasty served on brown rice.

The tofu is cubed and browned in a little oil (I use avocado oil a lot these days).
