I make a tofu chickpea kale stir fry. I weigh the ingredients first then divide in half or quarters for each serving.

I do that with some things, Dee Dee, definitely. My collection of recipes to track more accurately keeps growing! I don't like to add, though, until I'm sure it will be added to the rotation on a regular basis. Some things just don't feel worth it, so I end up just eyeballing it and trying to record the component parts as best as I can. Or I just take the nearest thing I can find in the database and call it good. Not as accurate as a lot of folks like to track, but I'm honest enough that it seems to be working 😉

p.s. a tofu chickpea stir fry sounds amazing! My husband generally makes the stir fries around here, so next time he makes some, I may ask him to throw in a can. Thanks!

JC -- I used canned chickpeas. I mashed them slightly with a potato masher, but left lots of chunks and some whole chickpeas. Then I made it pretty much the way I would make tuna salad -- a rib of chopped celery, some nuts or seeds, and some chopped pickles or olives. I used presliced almonds and kalamata olives this go-round. Then enough mayo of your choice to glue it together. I used the silken tofu mayo recipe from my Veganomicon cookbook

Dee Dee -- the recipe is in the Veganomicon cookbook. You might check to see if your library has it. If you can't locate a copy, I'd look around for recipes online
