I admit that my breakfast is high in everything, but that is what I like my Saturday's to start with. I can make up for it in other ways, i.e. exercise. Oh, yes, now to give you the recipe for my new cookies. It can be a breakfast or be a snack in the afternoon with coffee or tea. I like them. They are not too sweet. 1 1/2 cups Quick-cooking oats. 1 cup Whole Wheat Flour (or your fav.) 1/3 cup raisins 2/3 cup toasted chopped nuts of your choice (I used almonds) 1 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 2 large eggs, beaten 1/3 cup coconut oil 1/3 cup honey 1/3 cup brown sugar (or your choice) 2 teaspoons Vanilla extract 1/3 cup cocoa (baker's chocolate)
Preheat oven to 350*F... 12 Servings Mix together all the dry ingredients. Then add the rest of the ingredients and mix well. Mixture will be crumbly. I think I will add a bit more oil to moisten. Drop on cookie sheet (oiled or lined with parchment paper)in about 1/4 cup amount. You should get about 12 cookies. Flatted a bit on the cookie sheet. I baked mine for about 18 minutes because I wanted a slightly crispy cookie. Mine were perfect for me. you can change or adjust to your liking. For me it will be a good afternoon treat.
