Scored 2 bunches of cheap, overripe bananas at Natural Grocers this morning. Baked some vegan banana bread and cut the rest into slices to freeze for smoothies and nice cream. Need to tweak the bread recipe to use a little less oil to cut the calories

The base is 2 ripe bananas, sliced and frozen solid and 1/4 cup plant-based milk. Run it through the food processor until it's the consistency of soft serve ice cream, adding a tablespoon at a time additional milk if necessary. Make different flavors by adding a little sweetener and flavor ingredients during the processing. A basic vanilla is a teaspoon of vanilla plus a tablespoon of corn syrup, maple syrup or agave. We favor chocolate, adding 2 tablespoons cocoa and a tablespoon of maple syrup. There are a lot of recipes out there, but I got mine from the Fast Easy Cheap Vegan cookbook by Sam Turnbull. I'd highly recommend that book -- even for someone not crazy about cooking! 😂 A lot of very simple, straightforward foods in it

The best produce purchases are always those priced to sell. I keep all my bananas in the freezer since they end up in yogurt, smoothie or oatmeal.
