Process all except soymilk in food processor. Add soymilk and process until it just comes together. Form into measured 1 Tbsp balls and refrigerate. Makes about 40. Per each: 64 calories, 3.29 g protein, 3.73 g fat, 5.3 g carb, 1 g fiber

Honestly, Redporchlady, it's all I can do not to bury my face in the container and attack them like a dog going after kibble 🤣 I have learned enough self-restraint not to do that, though. One or two of these makes a nice pick-me-up snack or a small dessert after a meal.

Thanks, Morticia! wife- let me know how you like them if you try them. They might be a little high in carbs for some folks (I don't limit), but I'm not sure what net carbs would be since the sweetness is coming from dates, and those have some fiber. I used unflavored pea protein

Those look so yummy! I too make my own protein balls. 64 calories and about same nutritional values. I use oatmeal, pb, dates, chopped nuts, protein powder, and mini dark chocolate chips. You are right in that they are satisfying and great for when you crave a sweet treat. I think I’ll try to use cocoa powder instead of chips and see how that tastes.

Sounds yummy, Diana! When I was first trying to come up with this recipe, I tried making some with chips instead of cocoa, but my husband and I preferred the cocoa. I had looked up some vegan protein bar recipes, but I really wasn't finding what I was looking for, as most of them didn't incorporate enough protein powder for what I was trying for.
