I love this! I used to mix cooked rice, raw egg and cheese and cook that up for an easy lunch. Now my 15- year old makes it for himself... but he adds leftover meatloaf to it. It's beyond yummy. I have been meaning to try kimchi for a while... I could always use another obsession. 😅

We do this a LOT! A bowl of sticky rice with a dash of soy sauce, sesame oil, and sesame seeds, with a runny egg on top and kimchi on the side. Comfort food at its finest.

Do you make your own kimchi ? Or, can you recommend a commercial one that you like. I love cabbage in all forms but just haven’t grown fond of kimchi. You probably know but I will just repeat—- maki g your rice and then refrigerating it urns the starch into a resistant starch and creates a much less BS spike. Also makes for easier food prep because you can make a batch up and eat it all week.

Every time I eat kimchi I spend the whole meal thinking about how much I love kimchi, lol. Have you ever had it on a turkey sandwich on sourdough? (Chef’s kiss) I keep saying I’m going to make kimchi applesauce from the Nom Nom cookbook and when I do, I’m sure I won’t shut up about it. 😂

I like my eggs like that too. I call them ramen eggs. Is that the same as soft boiled eggs? I cook mine using sous vide method for about 7 minutes.

Omg I’m glad so many people like kimchi!!! I’m gonna show my husband all these comments so he knows it’s not just me obsessed with it hahaha. I like to boil my eggs just about 7 minutes so the yolks are “jammy” sometimes a bit softer for Ramen— I first saw this done for ramen so that’s where I got my inspiration. I WISH I could make my own kimchi but alas I am too lazy, it’s from Costco (: and I totally did NOT know that about pre cooking and refrigerating rice — this rice was precooked and refrigerated bc I am lazy to do it every day, but I had no clue I was helping my blood sugar not spike! Food science is so fascinating!!!
