so i had this poor little eggplant sitting on my countertop for the last 3 days...decided to cook it. sliced it 1/4 inch and put salt on it to drain off the water and bitterness in the colander in the sink. heated up a little EVOO, washed the eggplant off, did a egg bath, then coated each medallion in parmesan and romano grated cheese and fried 'em up....OMG!!! i actually had to call my hubby at work and tell them how good they were! he cracked up. i am gonna to buy more eggplant and make eggplant lasana (sp) on my next set of days off! i think hubby won't even miss the noodles when he eats my atkins version of his favorite lasana! i highly recommed it....at 6 medallions (4 oz) and am happily full...saving the rest for work tonite...off to do laundry and then nap for work tonite.
