Diario de Ingria, 03 abr. 17

This is a story of human stupidity. Plain and simple. As I noted yesterday, I bought an air fryer. To roast vegetables. So far so good. This thing comes with a baking dish. I don't bake anymore. I try to avoid wheat, and who needs the calories anyway. But curiosity killed the cat, I needed to know if this electric thing could bake. In addition to that I had a bag of frozen blueberries that got lost in the freezer and went icy. So I decided that instead of throwing blueberries away I would bake a blueberry clafoutis and throw that away. I could not find my old recipe and never baked a clafoutis with blueberries before but that did not stop me. I found another recipe on the internet and baked it in the air fryer. It was OK but not very good. Not sure if the air fryer contributed to the so so result or it was the untested recipe. Now I would very much appreciate if anybody could explain to me how I ended up eating half of it. That is 500 calories and more added sugar than I eat in a week though I still managed to stay within daily limits. The only thing I can add to my confession, is that the air fryer is very easy to use and clean. DH treated me as if I were rabid while I was baking, but ate the second half when I left for my doctor's appointment.

I do the same thing, I hate throwing out food and sometime want to try a recipe that is not diet friendly. I always tell myself that I will give it all away but end up eating more than I should.

Oh, clafoutis is a super easy French cherry pie. You just pour thin batter over fruit (preferably fresh ripe cherries and not frozen blueberries) and bake it into a very light puffy soufflé like cake. Perfect summer Sunday brunch food for small kids and adults alike. You can serve it instead of pancakes. Not so perfect when you are on a diet though.

i love clafoutis, i do not know if a keto version exists :/ have to look for it :) too bad for the diet but what is done is done, hope you will not feeling bad with all this sugar :/

It sounds like it would have been healthier than the blueberry coffeecake with cream cheese I would have made or the blueberry fritters...just sayin' 😂 LOL
