Okay, I have been playing around with the tip I got for MIMs and adding sugar free jello. I tried the orange jello first and I really like that one. Then I tried cherry and it was okay but my husband threw away the package after the first one I made because he saw it was open and thought it was empty so I didn't get to try it but one day. Then I tried lemon and I really didn't like that one. Today I played around a little more and I added 1 tsp. of cocoa to the cherry one. It was really good. Now I don't know which is my favorite, the orange or the choco-cherry. I get three MIM's per package of jello (I use 1 tsp.).

A couple tips for those of you who say they don't really like the MIMs. First I always take the flax meal and run it through a coffee grinder again to make it more like flour. I really don't like the texture if I don't do that. I also add 1 tsp. of sour cream to the batter to make it a bit more moist. And finally I definitely need my whipped cream cheese on top. Half a tbls. per half is enough. If I only have a MIM and add all that it is only 3.61 NC, with the tsp. of cocoa it is 4.37. I actually look forward to breakfast. Before I started Atkins I really never had breakfast. If I did it would be when I wasn't at work and it would be more like brunch. It is still that way on Sundays. I make sure my breakfast and lunch are made up the night before. I even mix the MIMs up the night before and then just pop them in the microwave at work for a minute. Ziploc now has the plastic containers. They have one that is a cup size and it is perfect for MIMs. I also use them alot for my lunch because I know what the measurement is if I use them.

The only problem I can't figure out is that it doesn't seem like the MIMs are helping me as much with my BM as it did at first. I don't know if it is because I am grinding it finer or from the jello. Can jello make you constipated? I may have to add some more fiber and see what happens. I have some of the powder fiber that dissolves and sometime I add that to food. I have let off though since I was eating MIMs every day but I think I am going to have to start using it. I'll have to be careful though because I think it has some carbs in it. Not sure, I'll have to check.

I think the key with these are how much sugar substitute gets added. Sugar free jello already has a sub, so extra might be the problem. Eliminate the splenda packet and see if things change. Or you can try adding one of splena's coffee flavor packets. They're impressive & tasty.

Sugar substitute can make you constipated? I didnt' know that. I have cut back some on the splenda in the MIM since I add the jello. I was thinking they said you could have 2-3 servings of splenda per day. I figured since I don't have any sweeteners throughout the day any other time I would be okay to have it with my MIM. I have 1 1/2 tsp. of splenda and 1 tsp. of the sugar free jello. Do you think that is too much for a day? I was adding 2 tsp. of splenda before I added the jello so I thought I was cutting back a little. I don't want to be messing myself up with splenda when the MIMs were working so well for me. I really usually don't have sweeteners any other time of the day. I only drink water except on a few occasions I have had a rum or vodka and diet coke but that is rarely. I have tried to make a few types of desserts but I havn't found anything I like because they have too strong of a the splenda taste so I just pretty much avoid the sweeteners except in the MIM.

Muffin In A Minute 1/4 cup flax meal 1/2 tsp baking powder 1 egg 1 TBSP butter 1 packet splenda 1 tsp cinnamon, or flavoring of you choice Mix together in a cup and microwave for one minute. top with butter or cream cheese or whatever & enjoy.

Just by what you've said the splenda is the new add to your diet. Try to cut back by half and see if things start to move. If so the splenda is the culprit. You could also try extracts instead of jello for taste. 1/2 tsp goes a long way. I use coconut extract when I have a sweet tooth.

Mymomma-I'll try that. I was so excited about the flavor of the MIMs. I'll try to see if I just use the jello if they will be sweet enough. I'll try to get some extracts. I have been thinking about that anyway. Thanks.

It is a Muffine in a Minute. It took me forever to figure out what one was also. LOL Here is the recipe found on this site. You can look it up and add it easily to your cookbook and food diary. But I take alot of tips from other people. I don't really care for the MIM just plain like this. Looke up forums on this site to get ideas and also the Atkins.com has some great tips about MIMs. You can also make them savory with garlic salt, parmesean cheese, ect. Some people use the savory ones as hamburger buns but I havn't tried that yet. I started with adding 1 tbls. of pumpkin and then I moved on to adding 1 tbls. of cocoa. Just make sure that if you add ingredients you add them to your food diary. One Minute Flax Meal Muffin A filling and versatile low carb muffin, ideal as a breakfast accompaniment. Ingredients62 1/2 g ground flax meal 1 large egg 1 tsp ground cinnamon 1 serving 1 packet splenda 1/2 tbsp butter 1 dash salt Directions1.Mix dry ingredients well. 2.Stir in melted butter and beaten egg. 3.Pour ingredients into a coffee mug. 4.Microwave on high for 1 to 1 1/2 minutes. 5.Muffin should pop out of coffee mug. 6.Cut and eat with desired filling.
