Made Shrimp Scampi over Spinach for the second time tonight. Decadently creamy, garlicy, rich. Low carb. I'd serve it to company. Got it off Tasteaholics web site. I double the sauce but I always believe if some is good more will be better. Happy Day. Good night.

LOL I love the double the sauce idea! LOL I can’t deal with shrimp after a few bad episodes eating it. 🙅🏻But it sound like a good way to mix it up. I do the same kind of stuffs over salads! LOL Normally chose more crunchy alternatives but fresh spinach sounds like a very elegant alternative to pasta. 🙋🏻
