Been studying ancient grains Farro Emmer, Einkorn (Little Farro), and Spelt (Big Farro) which is quite different. When I bought some grains a few years to save for emergencies I purchased some Spelt and Kamut but never learned about Emmer and Einkorn. Each website gives a little different slant on them. One site said that places in Italy felt that Einkorn was inferior to Emmer and fed to their livestock. But other sites do not mention that at all and say that Einkorn came first (with only two sets of chromosomes) and that Emmer (with twice the number of chromosomes) is a cross of Einkorn and a particular wild grass. And then Spelt is a cross of Emmer and another wild grass and has (again) twice the chromosomes as Emmer) which is the same number of chromosomes as modern wheat. Modern wheat has been hybridized about a thousand times in the last 100 years and is inflammatory to our bodies because of it.

My DIL brought spelt flour to my attention. She uses it quite a bit, I haven't tried it. I hadn't heard of the others that you mention here.
