I crammed in as much food as I could yesterday and I still dropped a few ounces the day after my ten-mile training run. Eating whole, unprocessed plant foods makes it very difficult to overeat, apparently! My weight always drops a little after my long runs, so I'm not that concerned about the loss.

My training run yesterday went really well! I ran it about 5 seconds/mile faster than I did last week, and it was 15 degrees hotter. The weather forecast look pretty decent for Sunday's race: mid-40's by 8 a.m. and partly cloudy. A little chilly, but I'll take it!

Today, I'll be spending the rest of the day bagging up the last of my veggie garden's bounty of chard for frozen green smoothies, and fermenting the rest of my beets. In addition to hitting the books for a couple of hours, I also think I'll bounce around a little on my rebounder and do some yoga this evening for some active recovery since today is a rest day from running.

Hope this week is off to a smashing start for you! Go make it extraordinary!

I really hope you make a cookbook someday because I keep stealing your recipes :) And I totally agree with you, whenever I throw in a strictly veggie/fresh day, I have a hard time getting up to my RDI...I'm like MAKING myself eat more lol

Everyday, for me, is practically a veggie/fresh day! I feel like a lot of my success is because I have extensive cooking/food prep skills. I can't imagine how difficult this would be if everything I made tasted like cardboard. I've learned how to make veggies shine! Even the most dedicated meat & tater lovers enjoy the food I make! A cookbook is in the works. I'm looking to make it a companion book to my documentary!

Can you please tell me more about "Sweeet2th's Home Made Organic Raw Sauerkraut" Is this a recipe you are willing to share?

It's really easy to make, Brent. Just cram as much shredded organic cabbage as you can into a large glass jar. Then, make a fermenting brine with Spring water (not chlorinated tap water!) and sea salt (I use 1 - 1.5 TBSP of sea salt per 2 cups of water). You can leave it plain or you can feel free to add anything else you like to the jar like hot chili peppers (I'm allergic, so I can't make mine spicy), black pepper corns, smashed garlic cloves, fresh ginger, or whatever you enjoy. Cover with a plastic lid (metal lids can corrode from the acids produced by the lactic acid bacteria and the sea salt) and let it sit and bubble for a few days until it reaches its desired level of fermentation. I've left mine as long as 2 weeks before I put them in the fridge! They'll keep for months in the fridge. I just ate a jar of fermented veggies I made almost 10 months ago!

If you want more details or ideas of what to ferment, go to nourishing meals dot com and look for their page "how to make lacto-fermented vegetables without whey". They have a good video tutorial on that page.

Awesome, thank you so much. I love kraut and I also know that eating fermented foods is very beneficial for your gut flora. I would like to incorporate more fermented foods but wasn’t sure how to get started. I appreciate the tips. I will give this a try! I will also check out that site! I'm excited now! I love trying new things.
