Chicken with Artichokes and Melted Lemons
Delicious glazed chicken matched perfectly with artichokes in a lemony sauce.
Ingredientes

- Heat olive oil in an 8" skillet over medium-high heat. When the olive oil is heated, swirl it to cover the bottom of pan.
- Add the chicken breasts and sear them until browned. Turn the chicken, and brown them on the other side. Remove the chicken breasts to a plate and increase the heat to high.
- Deglaze the pan with the lemon juice, scraping up and browned bits into the sauce.
- Add the stock and bring to a simmer. Add the lemon slices to the pan, reduce the heat to medium, and place the chicken breasts on top of the lemon slices.
- Add the capers, cover, reduce the heat to medium, and cook, covered, for 10 minutes. Remove the lid and add the artichoke hearts. Cover and continue cooking for 5 minutes, or until the breasts are cooked through.
- Remove the chicken to a warm plate. Increase the temperature and reduce the sauce to a glaze. Taste the sauce and adjust the seasoning with salt and pepper as needed. A little salt will reduce the acidity of the lemons and balance the flavors.
- Serve the chicken with the artichoke hearts, capers, and melted lemons drizzled with the glaze.

Absolutely the most unpleasant food I have ever prepared! Incredibly sour result. And no. Salt did NOT mellow the lemon. Horrible.

I was surprised how good the lemon slices were. I used frozen artichoke quarters from Trader Joes. They tasted a little metallic. Next time I'll try this with the marinated ones. Still, this tasted great. It's a keeper.

This is my second time making this dish and I changed it up a little bit. Seasoned the chicken breasts yesterday with herbs so they would soak up the flavor. Also, added about a cup of sauteed mushrooms and only used one lemon. I didn't even bother with the pre-browning the breasts, just put everything in a large baking dish and baked uncovered for about 80 minutes. It browned up nicely without all that prework. Served with sauteed chard and skinny mashed potatos.

A beautiful fresh and zingy citrus chicken dish. I served with baked sweet potato and sautéed spinach. A new fav! Thank you Girl_Illa for sharing. :o)
